- Chinese Chicken Salad with Asian Vinaigrette -- You can throw this salad together in 10 minutes by taking advantage of rotisserie chicken and preshredded carrots.But fresh mint and ginger are a must!
- Pasta with Shrimp and Feta -- When plump juicy tomatoes are in season, make this pasta dish for a scrumptious summer meal. Or leave out the shrimp for a great vegetarian variation. The leftovers make good pasta salad.
- Berry Tiramisu --This fabulous favorite stars berries layered with ladyfingers, raspberry preserves, and an orange cream cheese filling. Use your favorite seasonal berry combination and serve this gorgeous tiramisu in individual parfait glasses for extra pizzazz. Garnish with a curl of orange peel.

I have this and several other Trim & Terrific cookbooks - my son says that Chef Holly is the best cooker ever! He loves anything from her books. The best part is how quick, easy and healthy the recipes are. Not to mention, I usually have most of the ingredients in my fridge or pantry. She makes it so easy to feed my family on a budget and tight time frame. Try the Speedy Chili - I made it last week after seeing Holly on Nashville's Talk of the Town show. It was so easy and the family loved it.
I know I have made it in life when I am a son's favorite cooker...maybe because I had three kids myself and I hope to always make cooking easy, healthier and delicious so anyone will have time to prepare my recipes! And, I love being on Talk of The Town in Nashville...one of the best shows!!! Thanks, Cheri, for spreading the word about diabetic cooking is just healthy cooking....there are recipes in this book I make for parties...and try the Berry Tiramisu for sure!
